Gluten Free Sourdough Company Bread Mixes include all the dry ingredients including sourdough starter cultures. The finished product is a fully fermented flatbread made of high quality, whole grain Teff flour plus organic flavorings. The taste is full-bodied and complex and the texture is spongy yet substantial.

The process involves four 5-minute steps spread out over 24 hours. All you do is add water and oil. Dessert Breads also require a liquid sweetener like maple syrup, Agave, or your local honey when available.

Pumpernickel Flatbread – Full Sour: Traditional caraway and full-bodied sour flavor. Old world rustic texture, chewy and substantial. Develops a crunchy crust when toasted. Ingredients: Teff flour, starter culture, carob powder*, caraway seed*, chia seed*, salt. Mixes are assembled in my dedicated gluten-free facility and are free of gluten, dairy, eggs, soy, commercial yeast, starch flours, peanuts, and gums.I am very proud to say that I reused a lot of gently used equipment to build out my Gluten-Free Kitchen Facility. Besides making the money go farther, we kept these items out of the waste stream. My carpenter was in the process of remodeling his kitchen, and I was able to use his solid surface sink, countertop and faucet for my Gluten-Free Facility. We were also able to use extra pieces of countertop to create a shipping and work table.

Packaging: Inner packaging is BPA-free foil bags lock out the air and preserve freshness. These ingredient bags are sealed with a hand-held heat sealer. Outer packaging is simple and attractive biodegradable paper, as green-as-possible. Many bags have plastic liners but because I am using BPA-free foil bags for the ingredients I did not need an extra layer of plastic. For shipping, I have chosen packaging that is all paper, no plastic, so it is all biodegradable.
